A fresh taste at The Lawns: Ballyho to open with chef Dave Young at the helm

The highly anticipated final venue at The Lawns of the Lobby dining precinct is set to open on Tuesday 20 August. Ballyhoo, under the leadership of renowned local chef Dave Young, is set to revolutionise the area’s dining scene.

Dave, a Hatted chef and the former owner of the celebrated Temporada, has transitioned from his successful restaurant to become the Executive Chef at Ballyhoo.

“Choosing a venue steeped in Canberra’s history was a deliberate move towards doing something
meaningful in hospitality,” Dave says.

“Ballyhoo’s location in the National Triangle will attract a unique crowd on a national scale, providing an opportunity to truly stand out and be a part of the next chapter in Canberra history.”

True to its name, Ballyhoo is set to bring a lively and entertaining dining experience to the area. Operating from day until night, it will offer a vibrant atmosphere for those looking to enjoy themselves. With a focus on communal dining, Ballyhoo will feature dishes designed for sharing, making it an ideal spot for gatherings with friends.

Dave’s distinctive culinary style shines through in the dishes, highlighting top-tier ingredients and a lively mix of flavors. The use of a wood-fired grill and pizza oven adds a rich, smoky depth to the offerings, while Mediterranean and South American influences lend a unique and robust character to the dining experience. Dave says he’s excited to start a new chapter.

“Temporada was a great chapter, now I’m excited to create something equally exciting in this iconic space. I’ve got a clean slate to explore and experiment with new food concepts that aren’t tied to people’s expectations from me,” Dave says.

A refreshing departure from the formality of the National Triangle, Ballyhoo provides a laid-back,
relaxed atmosphere where the highly strung can unwind and professionals can escape the
business grind. Bathed in sunlight, thanks to its hexagonal windows that capture the sun’s rays.

Located in the heart of Canberra at King George Terrace, Ballyhoo is neighboured by beloved
Japanese restaurant Koto and the popular outdoor garden bar, Rosa’s, in The Lawns of The Lobby
precinct.
