Democratic degustation at Sage Dining Rooms

Diners keen to try a truly democratic degustation dining experience will be delighted to know โ€˜Taste & Testโ€™ has returned to Sage Dining Rooms throughout April.

Diners taking part in Sage Dining Rooms’ Taste & Test experience are asked to score each dish out of 10. This refreshingly crips starter with locally foraged edible flowers scored highly.

At your table, youโ€™ll find a pen and score sheet on which to mark each of the five courses out of 10 โ€“ along with space for comments on what you did or didnโ€™t like โ€“ as well as rating the experience, service, and beverage.

At the end of each Taste & Test session, after diners have departed, scores are aggregated; any dishes that rate under 7.5 are scrapped; those scoring 7.5-8.5 are considered and adjusted; while scores of 8.5 and above elevate those dishes onto the new season menu. It’s a rare – and exciting – opportunity for patrons to influence the menu of an award-winning restaurant.

Now in its ninth year, this latest instalment featuring chef James Vilesโ€™ (ex Biota) signature progressive menu is sensational.

While the specific menu items are a closely guarded secret, diners can expect Vilesโ€™ signature style founded on ingredients sourced from the farmers, vintners and growers of our diverse region.
