Food for thought: Canberra Centre to welcome hawker-style dining precinct

The Canberra Centre will welcome a new hawker-style dining precinct, Tiger Lane, later this year. Spanning 2000sqm, Tiger Lane will feature 12 dining outlets and bars split into different sections reflective of their country of origin including Japan, South Korea, Southern China, Northern China, and Southeast Asia.

Aussie chef Shaun Presland, ex-culinary director for Saké The Rocks, is leading food direction. A mix of individual restaurants, bars and hawker-like stalls, the precinct will be brimming with vibrant neon lights and energy synonymous with Asian cuisine.

Craig Macindoe, ex-general manager of Spice Alley in Sydney, is also heavily involved in the concepting of Tiger Lane.

Ahead of its establishment, Chef Presland is opening the Tiger Lane Test Kitchen this Friday, where he will be running cooking classes, serving exclusive set course meals, hosting private events, and testing new dishes.

The Tiger Lane Test Kitchen offers a set menu for $85 per person with a $59 beverage matching from 6-9pm, Thursday to Saturday night.

The Capital Region Farmers Market is on the look out to find Canberra’s Best Young Aspiring Chef, aged 16 years and under.

“We’re offering up to 20 young cooks from the Canberra region some of our most delicious fresh food to get creative with, plus they’ll get the chance to be one of three cooks to cook live at Market, with a total of $500 in Market vouchers up for grabs,” said Capital Region Farmers Market Manager, Sarah Power.

The event aims to show how creative young cooks can get with a limit of just $30.

“The top three chefs as voted by Market customers on our website will be awarded the chance to cook live in front of a Market’s audience on Saturday 17 September, and to share in a total prize value of $500 in Market vouchers.

The entrants’ dishes will be judged by local chef Gerald Ong, Head Chef and the creative behind Project Enoki and partner at Sourdog Provisions.”
