Pimp up a tin of tuna
Serves: 1-2
Salad
- 1 tin tuna shredded or chunks, drained
- 1 soft-boiled egg, finely chopped
- 1/2 cup halved cherry tomatoes
- 1/2 avocado, diced or sliced
- 1/2 red onion, finely sliced or diced
- 1/2 cup grated carrot or zucchini or similar
- 1/2 cup cooked pasta or chickpeas (optional)
Dressing
- 1 Tbsp mayo or plain yogurt
- 1 tsp mustard
- Pinch lemon zest
- Pinch black pepper
- 2 Tbsp water
To serve
1/2 head romaine, iceberg or cos lettuce
Place the drained tuna and all the ingredients into a large bowl and mix to combine.
Stir the dressing through and then season to taste.
You can then serve this over the lettuce leaves, or have it just on its own.
For a hit of glamour, use a stacking ring to give it height and that wow factor.
