Three mouthwatering recipes for world cake day

Itโ€™s world cake day today, Thursday 26 November, so to celebrate, weโ€™ve pulled three of the best recipes from the Canberra Daily archives.

Not that you need an excuse to eat cake, but if you wanted one, here it is! Thereโ€™s a little something here for everyone, from a light and fluffy meringue to a dark and moist chocolate cake.

1 Summer berry cloud cake

This recipe from Skye McAlpineโ€™s A Table for Friends is the perfect dessert for after a long lunch in the sunshine. The meringue can be made up to three days in advance and stored in an airtight container.

2 Three-milk cake

From Comida Mexicana by Rosa Cienfuegos, this pastel de tres leches, or three-milk cake, is the perfect celebration cake. Topped with cream, strawberries and peaches, how can you resist?

3 Mocha mud cake

Itโ€™s really hard to resist chocolate cake, especially when theyโ€™re this easy to make. Whip out that Thermomix (or another โ€˜all-in-one kitchen machineโ€™) and try your hand at this mocha mud cake.
