Ainslie watering hole Edgar’s will open its latest offering on Saturday, a wine bar by the name of Wakefield’s.

Upstairs at Ainslie Shops, Wakefield’s promises a wine list with more than 100 Australian wines and more than a few local favourites like Eden Road, Mada and Helm. There’ll be Australian craft beers aplenty and inventive cocktails galore – think an old fashioned with a Wakefield’s twist and a caramel espresso martini made with caramel vodka from local distillery, Underground Spirits.

Head chef Steven Jacomos has promised a seasonal menu that heroes Australian produce: lamb riblets, hand-rolled pasta, crumpets with smoked trout and bottarga, and apple tarte tatin are just some of the refined bar plates on offer to match the extensive drinks menu.

Joining Edgar’s and The Inn, Wakefield’s will complete the picture of the ultimate dining hub at Ainslie Shops, according to owner and local hospitality stalwart, Frank Condi. Pizzeria Mama Dough also forms part of the Inner North foodie haven.

“The opening marks the final piece of looking at Edgar’s as one big home, with a room for every mood and occasion,” he said.

“Our ultimate goal is to create personalised experiences for locals and travellers and be surrounded by good food and wine as they create lasting memories together.”

As well, Wakefield’s will become something of a hub to showcase local talent, with jazz, blues and soul, and burlesque performances to take to the stage throughout the week.

Cocktails will have a Wakefield’s twist.  

“With international travel off the cards for the foreseeable future, we are also looking at Edgar’s to provide an experience worthy of a trip to Canberra and we would love to encourage visitors to stay longer and explore the capital,” said Condi.

With interiors from Capezio Copeland, Wakefield’s is part-industrial part-vintage, with natural surfaces, timber and accents of burgundy and jade setting the scene for a wine bar that’s cosy, welcoming and elegant.

Wakefield’s Bar and Wine will be open Wednesday to Saturday 5.30pm to late. Find them at 1 Edgar Street, Ainslie.
